Founded by Marcela Salas, Patricia Burbine, and Chris Nelson, BibiSol is more than a restaurant — it's a tribute to our matriarchal lineage and rich Mexican Indigenous heritage. 

Sacred foods and traditional practices like nixtamalization are at the heart of our dishes, which are crafted with locally sourced ingredients and sustainable methods. Our Nixtamal menu features dishes inspired by seasonal ingredients and the classic flavors of Salas Salsas.

It’s through this blend of tradition and modernity that we’re weaving the rich tapestry of our Mexican roots together with the local vibe.
